LE
SIROP D'ÉRABLE
La sève de l'érable a été extraite
depuis fort longtemps par les Amérindiens, et ce,
bien avant l'arrivée de l'homme blanc en Amérique.
De nos jours, les acériculteurs savent bien tirer
profit de cet arbre précieux qui fait la particularité
de nos régions du nord-est.
Les méthodes de collecte et de transformation ont changé
grandement. Dès les premiers signes du printemps, il faut
effectuer la cueillette de la sève en entaillant l'arbre
et préparer le système de tubulure. La sève
y est acheminée par gravité ou succion.
La transformation est une étape cruciale pour l'élaboration
d'un produit de qualité. Un bonne façon de sauver
temps et argent est l'utilisation d'un appareil à osmose
inverse. Cet appareil réduit la quantité d'eau dans
la sève tout en maintenant son niveau de sucre. Utiliser
un conductimètre Hanna pour mesurer le liquide vous
indiquera si les filtres de l'appareil d'osmose inverse fonctionnent

Il
suffit ensuite de mettre la sève dans l'évaporateur
afin qu'elle subisse une séquence de réactions chimiques
complexes responsables du développement de la couleur et
de la saveur. Durant cette étape, la température
joue un rôle important. L'évaporation doit idéalement
se faire à ±104°C, en tenant compte de la pression

Lorsque
le sirop atteind l'étape finale, la couleur devient un
élément important pour établir la classification
et le prix selon la charte canadienne. L'analyse électronique
est beaucoup plus précise que les comparaisons à

MAPLE
SYRUP
The
sap of the maple tree was collected early in history
by the American Indians, and this was well before
the arrival of the white man in America.
Modern maple syrup producers are well aware of the value that
comes from this precious tree, found in our north eastern regions.
In
maple syrup production, collection and transformation methods
have changed dramatically. At the first sign of spring, preparation
for the collection begins with the tapping of trees, and preparation
of the collection systems. The sap is transferred by a system
of tubes which functions by gravity or suction.
A
critical stage of production is the transformation of sap to syrup.
An efficient way of saving costs and time, to reduce the water
content in sap, is with a reverse osmosis system. This system
reduces the quantity of the water in the sap, while leaving the
valuable sugar in the liquid. Using a Hanna Instruments conductivity
meter to measure the filtrate liquid, will indicate if the
filters of the reverse osmosis units are performing correctly.

The
next step for the sap is in the evaporator, where further reduction
of the water content and a series of complex reactions take place
to enhance the flavors and color of the syrup. During this stage,
temperatures play a critical role. Ideally, evaporation should
occur at ±104 °C, taking into account the atmospheric
pressure. Using high precision, Hanna Instruments thermometers
will insure that these temperature requirements are met.

When
the syrup is in the final stages, the color becomes an important
factor for classification and pricing, according to Canadian standards.
Digital analysis is far more precise than color comparisons, and
can reduce human error. Hanna Instruments precision photometers
